So here is what happens…

When me and laura get together for just 8hrs, so imagine what we are gonna get ourselves into in 3 days!!! Me and my wonderful friend Laura are taking a mini vacation to the Big Easy for 3 days! YEP THREE WHOLE DAYS! We are super excited to say the least. We are literally counting down the hours until we are on the road “Thelma and Louise” style! We are going down there to induldge Laura’s teenie bopper fantasy of meeting Taylor Hanson! Crazy i know but its gonna be a blast, we have reservations at a super nice Hotel. No kids and NO HUSBANDS! Sounds like heaven, right?!

Recipe Review #1

Ok I made this last night and it was really, really good. Not good “diet” wise but it was good and i will definitly make it again when i want to splurge or treat myself with some good homemade food. I got the recipe from AOL’s Food/Recipe section it is also on Allrecipes.com. I love looking for new recipes i have “favorite” folders full of them but i rarely ever try them but i did this one and im so glad i did. Below is the true recipe and under is what i changed. Kids had 2nds there was barely any left for brad when he got home. Signs of some good cookin! )

Cajun Chicken Pasta

Ingredients

  • 4 ounces linguine pasta
  • 2 skinless, boneless chicken breast halves
  • 2 teaspoons Cajun seasoning
  • 2 tablespoons butter
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 4 fresh mushrooms, sliced
  • 1 green onion, chopped
  • 1 cup heavy cream
  • 1/4 teaspoon dried basil
  • 1/4 teaspoon lemon pepper
  • 1/4 teaspoon salt
  • 1/8 teaspoon garlic powder
  • 1/8 teaspoon ground black pepper
  • 1/4 cup grated Parmesan cheese

Cooking Instructions

Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.

Place the chicken and the Cajun seasoning in a plastic bag. Shake to coat. In a large skillet over medium heat, saute the chicken in butter or margarine until almost tender (5 to 7 minutes).

Add the red bell pepper, green bell pepper, mushrooms and green onion. Saute and stir for 2 to 3 minutes. Reduce heat.

Add the cream, basil, lemon pepper, salt, garlic powder and ground black pepper. Heat through. Add the cooked linguine, toss and heat through. Sprinkle with grated Parmesan cheese and serve.

Ok now what i did differently was i used 5 chicken breasts cut up in to strips, i also used 5 large mushrooms sliced. I doubled the whipping cream and used a lil more Cajun Seasoning. I also used shredded parm cheese and mixed some into the sauced while it was cooking then topped with more when it was finished. I didnt have red bellpeppers so i just used 1 1/2 green and i used some regular onion as well. Also more pasta to go with more sauce(i made this for 5 people). It really was very tasty.

It’s been a while…

So i’ve decided to give blogging another chance, but this time not take it so seriously… When i first tried “blogging”( besides my little updates on myspace) i wanted to be just like dooce or even my good friend Laura.  Witty and fun, someone people would flock to read, but im not hip enough because i felt like what i typed sucked so i stopped. Dumb i know since blogging is mainly about journeling more then anything. Some people just happen to be better at it then others.. So this time im not taking it as serious just having fun posting stuff and if people read it good, if not oh well thats not what its about…

Anyways… Alot has happened since i posted on here in FEBUARY! It’s now October… School has started again. Madie is 6 now and Payton will be 4 on friday. We had his party this past Saturday(where above picture was taken by my good friend laura).  Fall is starting, which means all the holidays are upon us(My fav time of year). Can’t wait! Well thats all for now… Hopefully the next post wont be 8 months from now! :)
